Mojama de Atún Extra The mojama is a tuna salting that is made by pressing the meat in coarse salt, washing it afterwards and leaving it to dry for several days.
Many call the mojama “the Iberian or ham of the sea”, since its flavor and quality are highly appreciated at a gastronomic level.
The most appreciated or Mojama de Categoría Extra, is elaborated with the central part of the loin.
It can be eaten alone, with salted fried almonds or with a good splash of extra virgin olive oil. It is an artisan product that does not contain gluten.
