The ideal sardine for making these preserves is caught in the months of July and August, in the middle of summer, when the fish has the greatest amount of fat and is the ideal size to achieve the perfect preserve. Following the deep-rooted tradition of the area, the sardine undergoes a light roasting, with steam at 100º C, followed by sterilization and packaging. The result is a premium quality sardine preserve sold in 30 countries. Sardine preserves are different depending on the quality and flavour of the season, and can be stored for an almost unlimited period of time, offering an interesting evolution in flavour and texture, highly appreciated by the most demanding consumers.
