Conservas CODESA is a family business that is now in its 3rd generation, a defender of the seafaring tradition and the respectful treatment of the product. All its
anchovies come
100% from fishing in the Cantabrian Sea in the
spring season and are made in the town of
Laredo.
CODESA stands out for selecting the best raw materials and always maintaining the
traditional and artisanal methods of production, achieving numerous national and European awards and prizes for them.
At Casa Ballester we have selected several ranges of products:
- CODESA Gold Series, made with anchovies from the SEINE CATCHES of the Cantabrian ports during the months of April and May. Selected and cured with SEA SALT for an average of 12 months in the cellar, until they reach their optimum curing point before being filleted in a completely artisanal way, finally covered with top quality Olive Oil in a wide range of gourmet formats.
- CODESA Limited Series, which is made with a selection of the largest sizes of Cantabrian anchovies caught in the spring campaign, months of April and May. This anchovy is distinguished by being meaty, tender, smooth, with a unique and unmistakable texture and bouquet. The CODESA Limited Series anchovies are made with a fair amount of salt and a top-quality OMEGA 6-rich olive oil, as a perfect complement for their preservation.
- CODESA Limited Edition-Pink Series is designed for consumers looking for Anchovy Fillets in Organic Extra Virgin Olive Oil cured in Himalayan Pink Salt.
