Dehesa Dos Hermanas sheep cheese cured for at least 9 months.
Intense and persistent flavor, compact and creamy texture on the palate.
The cheese is wrapped in white protective ham gauze and is packed in a corrugated cardboard box characteristic for its green color.
Dehesa Dos Hermanas cheese is made on the farm in an artisanal way with raw milk, rennet and salt.
We select the milk from the end of the lactation period of our Lacaune breed sheep, to carry out a traditional manufacturing process of rennet, cutting and pressing.
Subsequently, the pressed cheese goes through a brine bath and then to the ripening and refining chamber, where it will remain for a long period of time, with the care of our master cheesemaker.
During this period it will be turned and oiled frequently, until a product with the characteristic texture and flavor of a Dehesa Dos Hermanas cheese is obtained.
