Description
Red Tuna Mojama Mojama is a tuna salted by pressing the meat in coarse salt, then washing it and leaving it to dry for several days.
Many call the mojama “the Iberian or ham of the sea”, since its flavor and quality are highly appreciated at a gastronomic level.
The most appreciated Mojama de Atun Rojo, or Red Tuna Mojama, is made with the central part of the loin of the bluefin tuna Thunnus Thynnus roho.
It can be eaten alone, with salted fried almonds or with a good splash of extra virgin olive oil. It is an artisan product that does not contain gluten.
