In Anchoas Hazas, anchovies are handmade, recovering the ancient tradition of the fishing village of Lastres in Asturias.

This historic milestone has never before been achieved by any cannery in the world.
We only work with anchovies from the Cantabrian Sea caught in spring, when the levels of fat in the anchovy are minimal and its reproduction phase gives it the flavor, smell and texture that differentiates this unique product.
For the preparation of this semi-preserved product, a product of the highest quality is used, with a curing period of between 1 and 2 years.
The process involves the anchovies being rubbed by hand, one by one, with cold water, de-spining them with tweezers and ensuring that the meat remains intact, to offer a unique experience that melts in the mouth.
They are then placed in olive oil with very little acidity, of the highest quality, which hydrates and avoids the transfer of flavors, to be immediately canned by hand and finished with the meticulous work of the Lastres netting that gives the can its characteristic seafood appearance.
